The calçots season goes from November to April, so if you are passing through Catalonia during these months you cannot leave without tasting this delicacy so rooted in their customs.
How to cook calçots?
While it is true that there is not only one way to cook calçots, there are some more traditional than others. The popular customs dictate that some good calçots should be cooked on the grill, but we can also cook them in the oven or on the grill and … still are delicious!
But no matter where do you cook them, what cannot be missing is the sauce that accompanies them which has a taste very particular. But what sauce should accompany the calçots?
Well, to eat these tubers we must accompany them with a sauce that receives the same name, that is, the sauce of calçots. Although it is true that romesco sauce is very similar, it has different nuances.
To begin, we will tell you how to prepare an authentic sauce for calçots whose ingredients are:
- Hazelnuts and toasted almonds
- Extra olive oil
- Mature tomatoes
- Garlic (raw and roasted)
- Toasted bread
Its preparation is quite simple but it can take some time. First, we roast the tomatoes and garlic and hydrate the peppers. Next, we peel and chop them. With the help of a mortar, chop the hazelnuts, almonds and bread. Once these ingredients are chopped, add the garlic, the peppers and the tomatoes. Finally, add the parsley, vinegar, oil and salt.
But is the sauce for calçots the same as romesco sauce?
The answer is: No. Although they are very similar sauces, they are far apart in some small nuances. For example, in the sauce of calçots the ñoras are essential while in romesco sauce the choriceros peppers are used, which are a bit bitter than the ñoras.
On the other hand, the sauce of calçots is less thick and takes parsley instead the romesco sauce is more compact and parsley is not among its ingredients.
