A recipe that over the years has become a distinctive symbol of Catalan gastronomy. That is why this indisputably Catalan symbol serves as accompaniment to all kind of dishes in our culinary tradition.
How it is prepared the bread with tomato?
The origin of this culinary banner emerged, as in most cases, from the cooking of the harvest. Therefore, it was a summer snack. Peasants eat it to appease hunger, until dinnertime.
Formerly, in the peasants’ homes, they only baked bread once a week and the bread was dried. In order for the bread to be tender, they would rub a tomato and season it with oil and salt. A custom that reached to our tables from the peasants’ houses and even the catering delivery service in Barcelona have now.
Despite of the years, much controversy continues in its form of preparation. Here are the main
characteristics of a good bread with tomato.
Bread. If you want to prepare a bread with traditional tomato you should choose a “pa de pagès”, but you can also opt for other types of wheat bread. The main attribute, is that this bread should be a
little bit old, since in order to absorb properly the tomato the bread must lose its characteristic moisture.
Tomatoes. The type of tomato used is a variety called “tomato to hang”. They are small tomatoes of about 5 centimeters in diameter which color is orange. Despite its size, with only half tomato we can spread a slice of bread because its interior is very dense.
Salt. Once we finish “scrubbing” the tomato, we must add the salt, always before the oil as this helps the bread to impregnate the oil.
Oil. Like all dishes of Catalan gastronomy the oil has to be olive oil and in a rather generous amount but without being too much.
